Grilled Curry Chicken

A great way to expand our meal options is to try recipes from other cultures. It’s also a great way to introduce new spices and decrease reliance on salt for flavor. Try this super simple Indian favorite that only requires five ingredients!


4 to 6 boneless chicken breasts
2 12 oz. cans lite coconut milk
Yellow Curry Powder, add to taste
Fresh Cilantro, chopped, add to taste
Fresh squeezed lime juice, add to taste
Pepper to taste

Season with salt and pepper and grill mark chicken breasts; set aside in a baking dish. Add lite coconut milk to a large skillet, Reduce by 1/4. Add curry powder, cilantro, lime juice, and salt and pepper in small increments to taste. Pour sauce over chicken in baking dish and bake at 375 degrees until chicken reaches an internal temperature of 165 degrees. Serve garnished with cilantro. Serves 6.
