Roasted Garlic Parmesan Chickpeas

This snack recipe is so simple, and your family will not even realize how good it is for you!

2 15-1/2 oz cans chickpeas
1 tbsp. olive oil
1 tsp. minced garlic
1/2 tsp. sea salt
Fresh ground black pepper to taste
1/2 cup grated Parmesan cheese

Drain chickpeas and spread them on several layers of paper towels; let dry 30 minutes. Preheat the oven to 425 degrees. In a medium bowl, combine oil, garlic, salt and pepper. Add cheese and stir until crumble and oil is absorbed. Add chickpeas and toss to coat. Spread on a baking sheet and bake for 45 to 50 minutes or until golden and crispy. Cool. When cooled, store in an air tight container.
